You given them their last bath, they will be so squeaky clean 😉 Hey I brought some Frozen clams, I was wondering, since I am sure they are "dead" now, raw frozen, How should I cook them before adding to my dish, since I know they open up, if if they don't they could be bad, but because their frozen, will the "good" ones still open up?

I worked at a restaurant and the pot washer went away for two weeks, so I did my 38 hours+ Monday to Friday and 2 shifts on saturaday and Sunday (15+ hour days) and I can tell you the amount of pots I had to wash was insane, this restaurant could hold 200-300 people, Was fun but tiring but I brought my first car in a few weeks =)

  3. Maybe I missed it, but is there a video on how to properly clean clams? I've found several on YouTube, but they each contradict each other on the process. It's confusing.

  4. Where I live we always been though to put the clams in salted water (preferably sea water) for a couple hours so they naturaly release the sand and then we end up with clams without any sand. We also use to put a little flower in this water so the clams eat the flower and then release the sand (at least that's what my family told me about this process). Only thing I know is that if this process is done right: 1. you'll actually see the clams alive (since they open up) in this water; 2. you'll not end up with ur pot/dish full of sand in bottom since they all released the sand before they go inside what ur cooking. Just my 2 cents.

    Clam chowder should not add tomatoes and should not add carrots and no red pepper,,this is no good the recipe,,👎👎👎👎👎👎👎

My husband, who taught me how to dig razor clams and steamer/rock clams, would put them in a bucket with a little salt water (don’t use fresh water because it will kill them) just to cover and then sprinkle a cup of cornmeal over them. The clams would consume the cornmeal which would clean them out!

  7. Don’t worry about the length of your videos. Some ppl never cooked before and need to learn especially from a great teacher and chef as yourself.

  8. No joke: our Chef Jon is a freaking saint! He is knowing and kind. I always feel encouraged in my kitchen efforts through his instructions.:)

  9. I make a traditional New England clam chowder. Much simpler and tastes great. What makes mine special is wood smoked bacon. Everyone loves it.

  13. Hi Cheff,funny you should say that ,when we were kids we would get clam chowder at the beach,take one bite,look at each other and nod and say ,SAND! That would mean that it was authentic homemade and delicious 😊we thought that the sand was the best part 😅I must say your videos are fun,you're kinda like a mad scientist creating something spectacular ❤

  14. In New England, clam chowder is a staple. Bertucci's used to have a chicken chowder: lots cream, butter, with carrot, broccoli & cauliflower. Can you try to duplicate that or tell me how to do it please

  18. You surprised me today! You left out the intro video and music. It threw off my timing of setting up my breakfast routine. I had to pause the video until I was ready to watch. I love your take on the clam chowder. I never wanted to cook it as I was nervous about cooking clams properly. I’m going to have to try it now. PS I also missed the ending outtakes.
