How To Make Saffron Infused Oil

4 cups neutral high quality oil (olive, sunflower, grapeseed etc.)
5g high quality saffron threads

  1. hey bro how goes it, wanted to ask , what do you use the oil in? can u drink the oil haha? i have safron in hot water before bed and no kidding it helped me sleep alot

  3. a little tip shared by an iranian buddy – pound the saffron in a mini mortar & pestle (there is a specific one for saffron actually, can't remember the name) for additional flavor.
    You can see the color difference when hot water is poured over, – it should be anywhere between 3-5 times more color!

  4. Saffron is composed of polar molecules, which dissolve in polar solvents, like water (remember back to high school chemistry "like-dissolves-like). Since oil is a non-polar solvent, the saffron will not dissolve in it. In general, increasing the temperature of a solvent will increase the solubility of a solute, but it will not make a polar solute soluble in a non-polar solvent.

    Slightly longer answer:

    Molecules are composed of atoms sharing pairs of electrons. Some atoms hold the pair of atoms more tightly than others. This results in one end of the molecule being slightly negative (near the atom that is hogging the electrons) and the other end becoming slightly positive (near the atom is that is not hogging the electrons). These types of molecules are called polar molecules.

    Water is a very polar molecule. The slightly positive end of one water molecule is attracted to the slightly negative end of a different water molecule. This is repeated for all water molecules in a sample of water, holding them together. (You can easily see this by putting a drop of water on you thumb, touching your finger to the drop and slowing pulling them apart. You will see a little "bridge" of water as the molecules stick together, even as you separate your thumb and finger.)

    When a substance, like saffron, dissolves in water, its molecules need to get in between the water molecules. Since water is very polar, the water are very attracted to each other and do not want to have just any old molecules in between them. In order to get between two water molecules, the molecule being dissolved needs to be polar enough to make water molecules happy to form attractions with them instead of other water molecules.

    Oil on the other hand is not polar (due to the fact that carbon and hydrogen share their electron pairs much more evenly, unlike oxygen and hydrogen). Oil molecules are held together by much weaker, non-polar attractions. When we to add oil to water, the oil molecules cannot form polar attractions with water molecules, so the water molecules will not separate, and they do not mix.

    Since saffron is polar, it's molecules are attracted to each other in a way that is similar to the attractions between water molecules. When we add saffron to oil, the saffron particles would rather be connected to themselves than to oil molecules, and they stay clumped together, and do not dissolve.

  7. Hi Chef Henry, Can I do this with safflower oil instead of olive oil? In farsi I think safflower oil is called roganeh golerang, incase you don't know what it is.

  8. it isnt better to "fry" the saffron first and put the oil afterwards? as you can see your oil dont get the saffron colour.

  9. Is heating the oil necessary for infusing? I infused 4 days ago and put in a cabinet. Using it for brain health. The recipe calls for BSO but since EVOO has great benefits, and affordable, I went with it instead.
