Ingredients Needed:
Dough:
2 cups (500ml) water @100f
1/3 cup (72g) brown sugar
3 1/4 teaspoon (14g) instant yeast
1/4 cup (60ml) neutral-tasting oil
5.5 cups (825g) all-purpose flour
1 teaspoon (6g) fine sea salt

Lye Bath:
-30g food-grade lye
-1000g filtered water

Salted topping:
-flakey salt for topping
-melted butter for brushing

Cinnamon Sugar:
-1 cup (225g) melted SALTED butter
-3/4 cup (155g) granulated sugar
-1/4 cup (55g) dark brown sugar
-2.5 teaspoons (7g) ground cinnamon

  1. Lye might end up being the first poison in my pantry 😰🫣 it’s a bit daunting to think about, really. Is there any alternative, even if it downgraded the recipe? I have a toddler and one on the way, two dogs and a clumsy husband… it’s really not fun to think about it 😩

  5. The lye is optional, I use baking soda and they come out just as good. Great recipe.

  6. Yeah, i ain’t gonna touch Lye with a 10 ft. pole.
    I’ll stick with the hot Baking Soda bath method for 30-60 seconds.

We're opening a retro arcade and I would love to serve some of the items from your cookbook (bought it!!) including the pretzles, but i'm not sure how to handle prep and holding to create a fresh product but limit waste. Specific to this recipe, how can I keep these fresh for our place? Chill/freeze dough (and for how many days is this possible), or should we cook them and then fridge/freeze the complete pretzles. Advice please!?

  11. I used this recipe. it was legit. I had to change placement in the oven but the rest of the instructions worked out perfectly. i never thought i would be able to make a pretzel that actually tasted like a pretzel. Thanks Josh! ………. you are wrong about Auntie Annes though. Of course its going to taste bad after several hours. …………. just a note for everybody, use cold water for the lye bath because it will get hot and your pretzel may fall apart.

  13. the comments are defending Auntie Anne's so hard! I don't get it. I've had Auntie Anne's, they're good, not great. my wife and I made pretzels at home, 10x better.

  14. Just use 5 cups of water and 1/3 cup of baking soda instead of lye. Heat to a simmer then shut off before letting pretzels rest for 10 seconds in hot water.

Josh you maybe having good tasting food but the best food of all freaking time is Alton Brown just saying but I didn’t say your food is awful I’m just saying Alton’s is far more better from his show good eats and goods reloaded and good eats the return shows with those recipes and his cook book recipes

  16. Closing the bags even if the the pretzels are fresh out of the oven makes them soggy and the baking soda starts to make it taste bitter

  17. For those who are scared of using Lye, you can add 2/3 of a cup (158g) of baking soda diluted in 10 cups (2370g) of water. Bring the mix to a boil and let the pretzel dough soak for 1min 30second. Then brush with an egg wash

  19. Dude, pretzels were like…heavenly to me a decade ago. Carbohydrate goodness. I love savory, soft pretzels. I only like hard pretzels when they're made in a mix. I had this coworker and she would make a mix of hard pretzels with cheese crackers but add chilli flakes, garlic and lime. She knew her stuff. She could sell that stuff on the street.
