

Just finished canning these pickled jalapenos tonight. Spent all day Wednesday canning 9 pints of salsa. Went looking for some different salsa recipes and saw the altitude adjustment statement at the bottom of the recipe… I’ve been using recipes in my big Ball book that didn’t mention anything about adjusting for altitude so I completely spaced that I need to add time. It’s been a few years since I’ve canned… I live at 3081 feet elevation. Am I completely screwed?? If everything is unsafe, is it unsafe right away, or is there some time to eat it??
