Hi! Cacık is a great, healthy, quick, simple, rustic, vegetarian Turkish recipe. It is usually eaten when it is cold, so it is perfect for summer or anytime you want to eat something light and to balance heavy things that you have been eating up! And it is super fast to make it! Is not that amazing? Furthermore in Turkey it is a very common custom to serve this soup with Turkish rice and Turkish haricot bean; here are the links:

Here are the ingredients:
1 cup yoghurt (300 gr)
1 large cucumber
Half cup cold water (125 ml)
Half cup fennel (you can use the dry one, as well)
Half cup fresh mint (you can use the dry one, as well)
1 clove garlic

  1. I grew up with my cacik so different! We grate the cucumber and I put dill, mint, garlic, vinegar, water, olive oil and lemon juice — I never heard of using fennel— I must try that! Also I love my cacik to be more watery, thinner and tart but my daughter like it thick!
