I'd like to try this on a smaller scale the first time I try this to be sure I'm getting tasty kibbeh nayeh. You used over 6 kilos ( 3.6 lbs.) of minced lamb which is quite a bit. How long can you keep it after making this ? (even refrigerated) ? The minced lamb you had prepared by your butcher, was this leg of lamb ? Did the butcher remove any fat prior to mincing ?
