This drink is beloved throughout much of the Middle East, especially during Ramadan. If you don’t like apricot, this isn’t going to work out. But any apricot-phile is going to dig this. FULL RECIPE BELOW.

Qamar Al-Din
Serves 4
INGREDIENTS:
-1/2 package of qamar ed-din (dried apricot paste about 8 oz.)
-3 cups water, plus more to taste
-3 T sugar
-2 T orange blossom water
PROCESS:
-Chop dried apricot paste into small pieces.
-Combine chopped paste, and 3 cups of water in a sauce pan over high heat.
-Bring to a boil then turn off heat and allow to soak.
-Then whisk until smooth – an immersion blender can also be used.
-stir in sugar
-Then add to a pitcher, along with orange blossom water
Enjoy!

It's my husband's family name yet I never even knew there was a drink named after it (just the paste). I'll have to give it a try next Ramadan. We usually just eat the apricot paste sheets: tear them into smaller pieces and wrap it around almonds or other nuts.
Perhaps you'd like to try out "Jalab" in time for next years Ramadan.
