Halloumi and watermelon is one of my favourite salads to eat in the summer. It’s dressing combines sour citrusy juices with some salt, honey and mint. I used lemon here but lime or a mix of sour citrus fruits is a hit too.

Be careful of the halloumi used in this dish as some are very high in salt (up to 10% salt or even more!). I usually purchase at most 3% salt content ones; always read the nutritional information in the label to avoid extremely salty halloumi. In the case you make a mistake and purchase a salty one, slice it up then soak in milk for a day before cooking.

Enjoy your salad as breakfast, lunch or dinner and also as a side dish.

Olive oil (virgin)
Salt
Lemon
