Today I would like to share with you, stuffed dried eggplant recipe from Antep region
Ingredients:
50 dried eggplants
For inner mortar:
1.5 cups of rice
300 grams medium fat minced beef
2 medium sized onions
1 garlic
a few sprigs of parsley
1 dessert spoon of pepper paste
1 dessert spoon of tomato paste
1.5 dessert spoon of sumac
1 dessert spoon of salt
1 full teaspoon of cumin
half a teaspoon of chili pepper
half a teaspoon black pepper
1 full dessert spoon of mint
half a teacup of liquid oil
For the sauce:
1 tablespoon of tomato paste
half a teacup of liquid oil
salt
3.5 cups of hot water
