I made grape jam and grape jelly over the weekend. I think I’ve over processed them all as the jar we opened last night is grainy. Can I do anything to save these?

    Grainy means sugar crystals that did not dissolve initially or formed as you scraped the sides of the pot to get the jam out. Try running them through a sanitize dishwasher cycle. It can melt the crystals that have formed. If it doesn’t work, nothing you can do but re-warm each jar as you open them.

    Grape can get grainy for several reasons, including to much sugar, overcooking the product, or the naturally occurring compounds in the grapes. None of them are safety concerns but obviously aren’t the product quality you are looking for.

    Have you used this fruit source before? If the fruit is local, what has the weather been like this summer?

    Have you use this recipe before with good results?

    Other than gritty, are there other qualities in the finished product that are not normal, like overset?
