I made basic applesauce, using a water bath for 20 minutes. 1/4” headspace per the recipe in the Ball canning book. Two of the jars have now seeped applesauce down the sides of the jars, though the lids seem sealed. What happened? Do I need to redo them?

I have made applesauce before. Usually though I just make berry jams.

    If I were a betting man I’d say you had some air pockets in there.

    Every apple sauce recipe I’ve ever seen (including the one in the ball complete book) asks for 1/2” headspace.

  4. I would give a little bit more headspace next time and also leave it in the boiling water (with heat off) for an extra five minutes so the temperature change is a bit more gradual. If it’s sealed, the contents should be fine…make sure to wipe the residual applesauce from the outside of the jars once it has cooled completely.
