A little salt improves the flavor of a food, a lot of salt hides the flavor of the food and numbs your tastebuds over time so that you can’t experience flavor without doing something like oversalting.

That’s my uni canteens amount of salt on fries. I like them somehow, but I can only eat them once or twice a semester. They also have to come with a metric ton of mayonnaise and a bottle of coke.

Used to eat lunch in high school with a dude who would pour no less than 30 small salt packets on one portion of fries. Called them heart attack fries. He joined the Navy after graduation and had a heart attack about three months in.

Chefs that use a lot of salt have to season their food with this in mind. For them when it “needs a little more salt”, the average person will not need anymore.
