You should definitely NOT do that. Galvanized steel should be nowhere near stuff you’re going to eat.

Either way, i keep my grills far away from my house or other structures with good reason.

Adding a stack, even one much shorter than this increases the Venturi effect and speeds up the air movement through the grill. You can see how fast the smoke is rolling out of there.
Looks like the thermometer is sitting about 300. Probably wrapped around and it’s close to 1200 degrees in there. At least it’ll be nice and clean when he opens it, and that gasket will just fall right away making replacement easy.
