Ingredients Needed:
Hoagie Rolls:
– 950g bread flour
– 20g fine sea salt
– 12g granulated sugar
– 3g instant yeast
– 50g extra virgin olive oil
– 589g water
– semolina flour for dusting (we need, get from central)
– rice flour

Cheese steak Filling:
– 4lb boneless rib roast
– 2lbs short ribs, boneless
– 1/2 cup tallow
– 1/2 cup vegetable oil
– 25 slices provolone cheese
– 3 Sweet onion
– 1 cup mayo
– 4 cloves garlic
– salt and pepper to taste

A5 Wagyu Cheesesteak:
-large a5 wagyu ribeye
-1 swet onion
-4 cloves garlic, sliced and toasted
-5 sage leaves, fried
-sliced gouda
-sliced swiss
-1/2 cup mayo
-1/4 cup cholula
-3 tablespoons sriracha
-2 teaspoons garlic powder
-salt and pepper to taste

  2. I still think a Philly Cheesesteak sandwich is better with marinated fire roasted red bell peppers instead of green.

    That's probably because I hate green peppers. My dad used too much of them in everything when I was growing up and I got sick of them.

    Edit: Just made one with red bell pepper. Damn that's good.

  3. Josh, I know it makes every culinary bone in your body hurt to admit this, but cheese whiz and American cheese play a role in the Philly Cheesesteak.

  4. tbh many of the cheese steak places in philly have fallen because they have become tourist attractions. I find small towns around philly area have the best. places I go to are Goombas in Sauderton and Franks in notorious in Quakertown. but I am happy you didnt fall for the biggest traps…. Pat and Ginos….. the be all end all of tourist traps. i can't even say they are over rated because pretty much everyone from the Philly area will tell you they're shit. max's definitely that quintessentially cheese steak.

  6. ahhh THAT's what you did wrong You didn't use a high hydration Ciabatta dough. Your dough had a tight crumb. That makes it too bread heavy. Nest time try 80 to 100 percent hydration.

  7. As a native Philadelphian, you nailed the first one. All the elements of a traditional cheesesteak with the care and attention to detail a lot of the popular spots lose as they decrease quality to service larger crowds and make more money. Sharp provolone is most popular amongst the locals but American or Chez-Wiz hit different and can be fun alternatives depending on your mood. Excellent point about the green pepper – I only see them added to "Philly Cheesesteaks" outside of Philly. The ROLL is always going to be the #1 most important part of the sandwich and I really want to try your recipe for homemade rolls. Thank you Joshua for putting out quality content.

    Search it. "Adidas ng Manok". Which literally means "Feet of Chicken". Chicken feet can be cooked as Adobo as well

  15. For anyone who wants to make this irl (and doesn’t want to spend 4 days making bread 😂) – the Cubano bread is a great sub for the loaf he makes here, and can be done in an afternoon. Made it yesterday and it was amazing!! Only other thing we did different is we got a jar of the cherry peppers from jimmy John’s and omg 🤤 it was amazing!!

    No sugar, no provolone cheese, no touch down cheese, no bread with sesame seeds, and I can go on and on, and when u eat it at home, of course it’s always better then the original makers to them anyways, PLEASE 🙏.

    IF U ARE GONNA COPY OUR FOOD, do it right at least, American cheese or wiz, the only part u had right was the meat, and onions but no sugar, and again don’t say yours is better then the real makers, please do it right, unbelievable
