  2. I once commented negatively on this video when I knew next to nothing about Mark Bittman or what he was about. Since then, I have bought two of his books and have begun to both understand how silly my attitude was and what motivates this man to work as hard as he does to improve ordinary people's lives when he could use his formidable writing and presentation skills to do many other things. I would like to offer this comment as an apology for my earlier one, which I have long since deleted.

  3. what's a good alternate to striped sea bass for this recipe? I don't think one can find striped sea bass here in the philippines

  4. Instead of thyme, oregano is used also you have to splash it with olive oil, you also bake it (aluminum foil) and not fry it.

    Thyme is hardly used in Greek cuisine, Greeks use oregano.

  5. At no point is this Greek. We don't really use thyme at all. Oregano, salt, lemon, pepper and garlic are the staples. Also how did you come up with the concept that jalapeños are at all related to greek food?

  6. In Greece we just grill the darn fish whole only raw salt outside and pronto. You can put olive oil mixed with fresh lemon juice on the fish after roasting. The best are sea bass, sea bream, red snapper, grouper, hake.

  7. I used this recipe and it came out awesome. I made two changes: First, I switched Thyme for Oregano. Then two, I rested the fish on 2 whole green onions. In the broiler for 15 minutes on the second rack (not the top) in an enameled cast iron skillet, and let cool for 5 minutes before eating. Perfect!

  8. For those saying that thyme isn't used in Greek cuisine that is complete and utter BULL.
    Although, Oregano is the most common herb used in Greek cuisine, that does not mean that Thyme is never used. Thyme, Cinnamon. Nutmeg, Parsley are also used in Greek cuisine. Oregano is not the only herb that Greeks cook with!! GET IT!

  9. Just tried your recipe for the first time today with a Bronzino fish and it came out great. The thyme was a good add one, however, after reading the comments I think I’m going to try oregano as a replacement the next time I try the recipe just to see what it accomplishes flavor wise. Either way, thanks for a great Saturday night dinner !

    2) Dont disrespect Greek cooking by calling anything with lemon and garlic Greek
