I’m planning to can tomatoes today but I don’t want them to disintegrate when I use them in recipes later on. I’ve seen this product suggested in some old forums online but can’t find any real info on it, such as amount to use, impact on flavor or whether it’s even safe.

    I use pickle crisp when I make pickles or pickled peppers. It doesn’t impact the flavor.

    There’s another way to make your pickles extra crispy, but it’s not used as often as it used to be. It’s called lime pickling. You can get pickling lime from Mrs Wages products.

    I usually only do lime pickles when I make bread and butter pickles. The process is lengthy. It does result in pickles so crunchy that after you soak them, they can literally break.
