Quick Spanakopita Pasta | Greek Spinach Feta Spaghetti Easy Dinner Recipes

This spanakopita pasta makes the perfect summer dinner because its so light and delicious with its sautéed spinach, bright tangy feta and fresh aromatic dill

Ingredients:
1/4 cup chopped fresh dill
Black pepper
Juice & Zest of Lemon
2 Eggs
4-6 Green Onions
12-16oz Frozen Spinach
1 Package Spaghetti
3 Tbsp. Butter

Directions:
Boil the pasta just until it’s a minute under al dente and place the pasta to the side being sure to reserve the pasta water. In a large pan add the butter and green onions. Fry for a few minutes then add the frozen spinach. While it’s frying in a separate bowl add the eggs, dill, zest, feta cheese and pepper. Give it a good mix and then add the pasta into the spinach that has been frying. Add the egg mixture over the spaghetti and add about 1- 2 cups of the reserved pasta water. Give everything a good mix and allow it to sauté for 3-4 minutes allowing the sauce to form. Top the pasta off with some fresh lemon juice and another sprinkle of feta cheese and enjoy!

  2. This recipe is awesome! I’ve literally made this probably about 10 ten times now. Super easy. Nothing can top spinach & feta together.
