  2. I did my first last week. First on BGE and first ever brisket. Totally nailed it. Thought about posting here and wish I had.

  3. Brisket is incredibly hard to photograph without the appearance leaning toward the dry side. This is because it starts to dry out when slicing. Your brisket looks really good. When I serve, I pretty much slice as guests are dishing up their plates.
