

My 6th loaf. 50% whole wheat. Been having trouble with the rise so went from 75% to 80% hydration and a dry starter and she looks good! The knife I used for scoring is dull. I think I would’ve gotten a better ear otherwise. I think the shaping could’ve been better too.
The biggest negative is that is lacking in flavor a bit and the crumb is slightly gummy🤔
It’s machine kneaded with some coil folds during the bulk fermentation.
Question: where do you score to get the bunny shape? 🐰🐇
