Started to make focaccia again. Using quite a lot of dry yeast. Let me know what you think

Recipe:
30g dried yeast
400ml water
Mix leave for 30min
500g strong white flower
10g salt

Mix leave for 2 hours

Add of olive oil and fold 40 times.
Transfer dough into a tin, leave for 30 min.

Preheat oven fan at 200C

Salt the dough and bake for 40 min
