Would you consider this medium rare? My father insisted it is. Personally, I struggle to even call this rare. Seems more blue to me.

    Unless your father thinks rare is completely uncooked… this is nowhere near medium rare. Your assessment of it being blue is correct.

    It certainly looks blue rare. Hard to tell without feeling how cold it is inside, but it looks completely raw to me.

    It is absolutely not medium rare.

    That’s between rare and med rare looks about 123-125, I’m ready for the downvotes but that’s nowhere near blue, looks like it was pulled a minute or 2 early I’d say pulled about 118, regardless of color you can see the texture is much tighter on most pierces aside from the piece on the left which seems less. Some people consider rare 130 but I go by the 120/130/140/150/160 for being rare to well done which is the widely held temp ranges. I would by no means consider myself an expert but I’ve cooked over 10 tons of beef as much as 13 (taking average weights)and over 6000 pieces whether it be roast or steak. Color is not a dead giveaway for doneness, it’s a good guide but I’d say roughly 10 percent of the time it doesn’t match up perfectly with about a 5 degree variance.
