
It’s been a while since I did ribs. I’m not finding much of a membrane to remove like I remember doing in the past. There’s definitely not enough to pull up and grab with a paper towel like I’m used to. I’m not sure if I’m just am idiot or maybe they are removing the membrane before packing? Do you see much or a membrane here?

It does not. I find the easiest way to take it off it’s getting a corner of it with a wet paper towel.

I’m never able to get membranes off of Costco ribs either. I do recall a post about a month back where someone “confirmed” that they did remove them. Makes sense as I’ve never noticed a difference between Costco ribs and those I was able to get the membrane off (‘Cept that most other ribs are dwarfed by Costco’s).

I ran into this just a couple weeks ago. It looks like they tried to remove it, but did a shit job. There was mostly definitely membrane still attached, very apparent after the cook, but it was not possible to get under it and pull it off in advance. I’d rather they have left it intact and let me remove it than whatever mechanical monstrosity or whatever just attempted to scrape it off poorly.
Most of the time yes. I have had a few packs throughout the years that were not removed.
And left half the rack full of shiners…. Thats messed up.
I spent an embarrassing amount of time searching a rack before I realized that Costco does, in fact, remove membranes. On the baby backs, at least.

If you can clearly see the meat like you can here, the membrane is removed.
The membrane is thick and white. You can’t see the meat or really the bones unless you remove it.
That super thin layer there is not the membrane.
I love when the membrane gets crispy on the grill.

I’m getting ready to smoke 2 racks of beef back ribs from Costco today myself. And mine definitely do have the membrane and don’t look like yours.
Was that rack pre salted? I didnt know that was a thing either…a rack from my local store ended up turning into ham bones after i cooked it….i was sad
Did some over Labor Day. Membrane had been removed on all racks.
I just wish they would trim off all that excess loin muscle that gets all dried out n nasty. Last pack I did my own trimming and they came out great. Now I have a couple pounds trim for sausage.

At mine they do. They don’t remove the membrane on beef back ribs though.

Asked my friend who has worked at Costco for a few years and is big into smoking and he says they do not remove the membrane and he just started removing them off the ones he buys this past year.
In the cryovac bags. No. If they are removed from the bags they often do.
That’s funny. I just had a pack where it was removed and was surprised, or maybe because they were back ribs and not St. Louis. I dunno. Either way I haven’t had many packs where the membrane has been removed from Costco.
Just made some last weekend and I looked and looked and couldn’t find it. So I went ahead and made them…def no membrane.

Costco usually does remove the membrane. Found out the hard way myself.
They specifically told me yesterday that they DO NOT remove the membrane, even in the preseasoned babyback ribs. They told me it would take them too much time. They did say the pork spare ribs do not have a membrane to remove.
Had Costco baby back recently. Was not removed by Costco.
On classic spare ribs I have had to remove the membrane myself but on baby back they have already been removed.

Tip for baby backs with membranes: put your finger under the membrane all the way from top to bottom, near the middle, and with one hand pull the membrane off and the other hold the ribs down. No need for paper towel and way quicker.
At mine: spare ribs no, baby backs yes.
