    This was the inspiration form a few weeks ago:

    Mine was 2 lb velveeta, 2 lbs pepper jack and about 1/2lb smoked cheddar. About 1.5 lbs of pulled pork from an earlier smoke. 8 oz jalapeño, 1 can rotel and 1 can of evaporated milk. Mesquite blocks and about 2.5 hrs at 200-210. Turned out amazing.

    Did you pre-cook the onion and shallot? I also presume you precooked the sausage, yeah?
