    Cook the roux longer on the front end (stirring constantly to not burn) and you’ll get that natural dark color

    I would skim some of that fat off the top before plating, but if served like this I would not complain.

    Lots of upvotes for this … this is mediocre by Louisiana standards. Sorry. Roux is not dark enough, red bell peppers, needs to be deoiled or degreased, sausage doesn’t look browned off …
