Wow The secret is steaming that is for sure!! I can't believe how creamy they came out I did them individual ramekins they were so lovely! I made it with Italian meatloaf so I wanted more of an Italian taste so I did better in marscapone cheese with the Parmesan on top lovely just lovely My family couldn't stop eating it! ❤️

I watched Marco Pierre White make mashed potatoes in a food processor adding milk and butter. Maybe the liquid makes the potatoes less gummy?
I have to try this. It looks wonderful! But Thyme instead of rosemary, or better yet Herbs de Provence . Even better❤ Too much rosemary tastes like wood, great aroma however.
Ricing potato to avoid the gum/glue texture at volume in a restaurant. Surely they would have a moulin c$30-50 or the prosumer or professional electric equivalent c. $200 to over 2k$ ?
