I think I maybe overproofed some? Underprooofed? Not totally sure, but, OH MY GOODNESS, I’m so happy with my improved croissants!!!
I know that I still need to do better, but, to me, this is a massive improvement! I am smiling ear to ear whilst typing this, seriously.
*The inside picture is second to last (pic number 7)*! I see a honeycomb, don’t you?! I will link my last batch of croissants (my first attempt) in the comments and you will see how much better these ones are!
Again, I’m sure some of you may be like “that croissant needs work,” and I can understand that. But, to me, these are beautiful and I’m really proud.
Thanks for letting me share! That closing (“thanks for letting me share”) feels like I’m at an AA meeting. Let’s call it CA for Croissants Anonymous— there is a real CA, too, for cocaine, but, in this very wholesome sub, the “C” stands for croissants. It works because… I am addicted to croissants, and I will *never* recover!

I feel like a *real* baker, now— even though I can’t even properly assemble a layer cake. Now, to keep improving!
(As for the stuff on top, it’s turbinado sugar. I like how it tastes on top all caramel-y. Probably should have done some without, though.)

Random fact you didn’t ask for: croissants means Crescent because of their moon shape. 🌙 But in Spanish they are called cuernos which means horns. I like the moon shape better.
