

First time waterbathing a large amount of salsa with ingredients from my gardened. Canned them 5 days ago in pint jars and noting some bubbles that may or may not have been there at first ( I don’t know it the bubbles are new or not as it’s been on the counter since canning out of sight). Salsa has a lot of tomatoes, green peppers, poblano, onion, garlic, cilantro, salt and has lime juice, cans sterilized for 15 minutes in rolling boil and then water bathed for 15 minutes.
Concerned that I may have done something wrong and ruined hundreds of veggies grown at home.

If you followed a tested recipe and processed the jars for the required amount of time and the jars sealed fully then it should be fine. If one or more of those requirements is not met then I would assume that it’s fermenting and toss them.
