This dinner is sooo easy & my favorite when I’m too lazy to actually “cook” lol. I don’t measure so everything is just an estimate.
You can marinade your chicken in buttermilk, pickle or pepperoncini juice + egg, or egg + mayo. Use a ranch or taco seasoning packet for seasonings. You can also use panko instead of cornflakes, or do a combination of the two. I did that a few months ago with [chicken nuggets](https://i.imgur.com/kFM9QCe.png). You could always used crushed cheese crackers too.
I usually do 50/50 buttermilk and pepperoncini juice. I like the taste of the pickle/pepper juice & go through a jar a week so I always have it on hand lol.

**Ingredients**
*Chicken*
* 2lbs chicken breast or tenders * 1 cup buttermilk (or you can use pickle juice) * Few dashes of your favorite hot sauce, 2-3 tbsps * Squeeze of yellow mustard
*Breading*
* ~2.5 cups crushed corn flakes * 2 tbsps AP flour * 2 tbsps grated parmesan cheese (green bottle stuff) * 1 tbsp of each seasoning – Garlic powder, dried chives, dried parsley, fresh black pepper, onion powder, smoked paprika, and chipotle chile powder. * 1 tsp of each seasoning – kosher salt, dried dill, & cayenne pepper * Cooking oil, I used olive oil. (Preferably in a sprayer)*
**Instructions**
1. If using chicken breast, pound until same thickness. Cut into 2-3 strips, depending how big your breasts are. 2. In a large bowl or ziploc bag, add marinade ingredients. Let sit in fridge for 2-12 hours. 3. Add cornflakes, flour, parmesan, and seasonings to a bowl. Stir everything together and give a taste, should be very seasoned. 4. One piece of chicken at a time, lay chicken into seasoned cornflakes and press firmly on both sides. Do not leave any wet spots. Sprinkle cornflakes into wet spots and press if necessary. Place breaded chicken on a cookie sheet lined with parchment sprayed with oil. Repeat until all chicken is breaded. Spray (or brush*) the top of the chicken with olive oil. 5. 425F oven for 15-25 mins. Until crispy and golden*
*I do not flip my chicken. If you find your chicken not to be crisping on top because it might of gotten too saturated with oil, I would flip it once. That’s why I recommend purchasing cooking oil spray (not Pam lol) or buying a sprayer online and putting your fav oil in.
