Add the tomatoes, parsley and season well and cook for 10 minutes, add the prawns and cook for another 6-8 mins until the prawns are nice and pink. I used some of the pasta water to thicken the sauce. Toss the pasta, serve with grated Parmesan and more parsley.

400g linguine
400g fresh tomatoes, finely chopped
400g raw king prawns
100ml white wine (optional)
5 garlic cloves, chopped
2 tbsp olive oil
pasta water
Handful of chopped parsley, finely chopped
Parmesan, grated
