Prawn linguine with fresh tomatoes

    Serves 4

    400g linguine

    400g fresh tomatoes, finely chopped

    400g raw king prawns

    100ml white wine (optional)

    5 garlic cloves, chopped

    2 tbsp olive oil

    pasta water

    Handful of chopped parsley, finely chopped

    Parmesan, grated

    Method

    Cook the pasta as per instruction on the pack.

    **keep some of the pasta water to make the sauce.

    In the meantime, sauté the shallot, garlic and cook for a few minutes. Add the wine and reduce for a couple of minutes. Add the tomatoes, parsley and season well and cook for 10 minutes, add the prawns and cook for another 6-8 mins until the prawns are nice and pink. I used some of the pasta water to thicken the sauce. Toss the pasta, serve with grated Parmesan and more parsley.
