Anyone has an idea of an alternative for Takashi’s midnight ramen? For those who don’t know, Takashi was a Korean bbq that closed down last year and they served a midnight ramen, by reservation only, on weekend nights. I believe it’s beef broth/bone based and I can’t seem to find any alternative even close to this. I will literally fly ANYWHERE in the world to have this kind of beef-based ramen!!

Fwiw it was a Japanese bbq. But truly one of the most exceptional restaurants in the city. I hope someone has something comparable in mind, I miss it.
There’s a beef town in Japan where everything is made with beef products, from the soup to the sushi. It’s north of Kyoto…. Jeju Noodle Bar has a Wagyu Ramyun with veal bones as the base. I’ll bet that it’s a much lighter flavor than what I’ve heard about Takashi’s (never got there).
