Prep Time: 10 minutes Total Time: 10 minutes
Ingredients:
Zucchini – 2, medium
Carrots – 2, medium
Cherry Tomatoes – 250g
Olive Oil – 3 tbsp
Salt – ½ tsp
Black Pepper – ½ tsp
Pesto Sauce – 4 tbsp
Directions:
1- Cut the ends off the zucchini, using a vegetable peeler, cut the zucchini into lengthwise ribbons. Repeat this for carrots.
2- Chop cherry tomatoes.
3- Place them all in a large bowl.
4- Next add olive oil, salt and pepper, and pesto sauce toss gently until fully coated.
5- Bon Appetit!
