This week my grocery store has ground beef on sale for under $3/lb so we stocked up. some will be going to the freezer, but we’re planning on at least 3 meals made with it this week. Last night was “Korean” Ground beef. Since I had most of the ingredients on hand, this only contributed about $5 to this weeks grocery bill.
**Ingredients**
For the Cucumbers
* 1 cucumber, peeled and sliced into half moons * 4 tbsp rice wine vinegar or white wine vinegar * 2 green onions, sliced * 1 tbsp sesame oil (preferred) or vegetable oil * 2 tsp sugar * pinch of salt * 1 tsp sesame seeds (optional)
For the Beef
* 1 lb ground beef * 3 cloves of garlic, minced * 1 tsp ginger, minced * 1/3c brown sugar * 1/4c low sodium soy sauce * 1 tsp gochujang or sriracha * 1/2 bag of broccoli slaw (this is a store-brand bagged slaw my grocery store carries made of shredded broccoli stems, carrots, green and red cabbage) * 2 green onions sliced * Rice to serve

**Directions**
1. Combine all cucumber ingredients and set in the fridge until ready to serve. 2. Cook the ground beef w/ the garlic and ginger in a hot, oiled pan 3. Drain some of the fat, then add the brown sugar, soy sauce and the gochujang or sriracha and stir to combine. Once the brown sugar is no longer grainy add the slaw. 4. Add the slaw to the the beef mixture and cook for another minute or two, just enough so the shredded veggies aren’t raw. 5. Serve the beef + cabbage mixture with the cucumbers over warm rice
Makes at least 4 servings, but this can be stretched by making more rice or using more of the bag of slaw to bulk up the beef portion.
