Pineapple upside-down cake is a classic dessert recipe in which you bake it, well, upside-down! When you flip your cake out of your baking dish, then it’s right-side up. Or is it then upside-down? Better not overthink this; it may be a “which came first, the chicken or the egg” situation, and honestly, I rather just think about that soft yellow cake topped with caramelized pineapple.

  1. I don't know that my mom ever made this when I was growing up. I may have had it at a church supper or something. The dessert that takes my back is chocolate cake with peanut butter- cream cheese icing. 😀

  2. This is a recipe I will have to make with my granddaughter. She's 15 and has been baking for about 4 years. She loves pineapple too!!! Cooking & baking is so much fun when it's a shared experience! I have so many wonderful memories of cooking with my sisters over the years & I know we will make many more.

  3. Just made this! I like that your recipe doesn't include yogurt/sour cream like some others. BTW…. YOU CAN NEVER HAVE TOO MANY CHERRIES!😁

  4. Yum, bringing retro back! Why not? I'm a bit over food trends. Classic is classic for a reason and younger people should be able to experience the yummy goodness we grew up with too. In my opinion. Very colourful contrast too!

  7. Can u tell me a way to get the pineapple juice cause we don't have tinned pineapple cans in my country so I use the fresh ones…so how can I get the juice..

  8. When you make it in the rectangular pan as you have done, each person gets an entire slice of pineapple. In the round pans, you just get fragments. I'm glad you remembered to include the cherries.

  9. OMGosh 😂😂 I've just put the cake in oven, I forgot to buy the essence, so no essence. I didn't have enough pineapple for three across, but got a cup of juice. Didn't buy cherries, the one's in a jar looked anemic. Put cake in oven, went to set timer when I noticed the cup of pineapple juice sitting on the bench. Took cake out if oven poured over around half cup of juice and used a spoon to mix it in. I just had to share this. So I'll let you know how it tastes 😂😂 I brought french vanilla ice cream to go with it for pudding. One of my boys will be having a bit of a late night. His bed time is in 15 minutes 😊

  10. Hands down best recipe and is now my go to for an easy delicious pineapple upsidown cake. However, one day I didnt have pineapple on hand, and used this exact recipe with apples – it was delicious! Core the apples n arrange as u would with pineapples but stack the slices to be less than an inch thick. Pop a blueberry in each hole. Used orange juice to sub the pineapple juice and vanilla extract for the almond.

Gemma,we love pineapple upside down cake and it has been several years that we had an upside down pineapple cake.I am going to copy down your recipe and make it at home soon.It will have to wait until my left eye is operated on sept.28 and and a week or two I am going to buy the ingredients to make it at home with my mom's help.I will let you know what we think of your cake and how much we enjoy eating it and to share it with guests and friends that come by to visit us at home

  13. It's been many a year since I've tasted this wonderful desert, like the 80's or maybe late 70's. The last time I ate pineapple upside down cake was when my coworker of Irish descent baked a delicious sheet. RIP Carolyn D. 🌹🙏🏽

  14. This looks great but a little thin on the cake side. Do you think increasing the batter part by 50% would work? Would the pineapples survive being in the oven for a little longer?

  15. This was really good. I used Swan Cake flour though. It looked and tasted just like I remember the first time my Mom made it.

  16. Hi Gemma! I tried making this cake but for some reason when I’ve been melting the brown sugar and butter, the sugar isn’t dissolving and just seems to be burning and turning grainy, any suggestions?
