I baked my own Cuban bread because it’s unavailable in my country
I used Chef John’s recipe – which called for a starter and lard.
I’ve made “cubano” before. Marinated the pork, made the mojo. Roasted for hours. Good ham. Good sour pickles, mustard, good Swiss cheese etc
But they still kinda were tasty but not my favourite sandwich
So I tried this bread recipe. Made cubano – cos had all the ingredients.
Just amazing. I can see why people defend the sandwich w cuban bread. It just has the best texture and crisp. Crust was super thin but brittle/crisp. Crumb was almost…soft cake/chew. Due to the lard likely.
I cannot make another cubano without this bread now

I’m a food lover but far from the homeland of Cuban bread. Having read about it… the thin, crisp crust and soft but dense interior… I crave to know what the closest equivalent might be? I’m in Chicago western suburbs so we have a lot of ethnic grocery stores, but for some reason I just havent seen Cuban bread.
