Ingredients
1 cup Urad Lentils, rinsed
10-15 grape tomatoes, halved
1-2 avocados, diced
5-6 scallions, thinly sliced
1 English cucumber, peeled and diced
1 jalapeño, seeded and finely chopped
1 bell pepper, diced
1/4 cup olive oil
3-4 tablespoons white balsamic vinegar
salt, to taste
Instructions
Bring a pot of water to a boil. Add the lentils with a half teaspoon of salt. Boil until al-dente. About 12-15 minutes. Drain and cool.
Add all of the salad ingredients along with the cooled lentils to a large bowl and toss together.
Taste and adjust the seasoning if needed.
Serve. Kali Orexi!
Notes
The lentils can be boiled and cooled and stored in an airtight container in the refrigerator for up to 5 days.

Hi Dimitra, I love your channel, I was born dirt poor in Brazil but my father is Portuguese descent and a fantastic farmer, so growing up all the had was the amazing food he grew ( I thought that fava beans was a Brazilian red neck thing), so at age ten I could cook a shashuka, polenta and minestrone to perfection, I remember my grandmother ( Vovo), telling me can you cook that delicious soup, your uncle Amadeu ( my favorite don’t tell anyone) tries, I cannot hurt his feelings but no one does it like you, my best friend who is full on Italian loved it too, I look forward to my day off so that I can can cook, so when you add extra pepper and olive oil , I am saying yes, I just met my food twin, best wishes on your channel, family, etc

  11. If you put the cherry tomatoes between the bottom of two dinner plates and run your knife between the two plates, the cherry tomatoes are all cut in half in a jiffy. We do this all the time. Then you just pick the plate up and dump them into your mixing bowl.
