I can’t stop making this. Feel like I’m getting close.

Boil water
Toast peppercorns
Grate Pecorino
Pasta in the water until almost al dente
Take out some water, let cool to 150f
Add water to Pecorino to make a paste
Grind peppercorns, add back to pan with some pasta water
Add noodles to pan to finish cooking
Turn off heat, let cool a bit
Mix cheese in vigorously
Eat it all
