Super easy and looks lush! All about the top ingredients-I am definitely going to make this version. My French boyfriend add a little Basalmic vinegar to de-glaze the pan when he cooks the pancetta part. Is this just going to go away from the recipe too much? And 2nd question (as they do not like pepper) can I replace the pepper? (reluctantly)

This recipe looks amazing but I can't help but notice the wasted egg whites. They haven't been incorporated into the dish which makes me wonder what he does with them?
Quite different from a ”traditional” carbonara, I mean garlic? I think I’ve seen him in another video where he used guanciale and pecorino. I’m sure it tastes great nonetheless.

All false. Guanciale is better than pancetta. No Garlic, it's the worst felony you made to the Carbonara !!!!! No Butter, no Olive Oil !!!!! The grease of the guanciale (or your pancetta tesa) is enough. You forgott pecorino !!!!! You're to Italian cooking, the same as Spaghetti-Westerns to American Westerns: a bad farce.
