I’m diabetic and always looking to lower carbs. Tried riced cauliflower straight out and it sucks. Now I chop it chunkier than rice and start by sautéing a finely chopped onion in olive oil. When it’s halfway cooked I throw in the cauliflower, salt & pepper, and cook until semi-tender and getting brown. It doesn’t make it taste like plain rice, but it tastes amazing and works as a great substitute.

    My ex sister in law was type 1. She would cook cauliflower in chicken stock, which made it so much tastier.

    Chop it fine, spread it on a baking tray with a light oiling and salt and pepper. Bake it, stirring it about occasionally until it goes a bit golden.

    I feel like you could eat a serving of cauliflower and butter before eating a serving of solid fried rice (with enough protein and fat and veg fiber) and have a negligible effect on blood sugar spikes.

    IMHO people who rave about cauliflower fried rice don’t really know a great fried rice as there is zero comparison. So you’re not alone in thinking it sucks!

    I’m a fan of mixing riced cauliflower with normal white rice in about a 1:1 ratio, but I’m not sure if that’s viable for you

    we make it and mix with green enchilada sauce and black beans & corn.
