Raita is an Indian, Pakistani and Bangladeshi condiment made with yogurt (Dahi) and can be used as either a sauce or dip. The yogurt mabe seasoned with coriander, cumin, mint, cayenne pepper and other herbs and spices.

I have chosen the simple method that can be found in many restaurants. Feel free to add other spices that will make the condiment even more tailored to your taste.

It’s quick and easy and beats the Raita’s that are bought in jars from the supermarkets that taste artificial and are full of preservatives.

  3. Mint raita does not need Mango chutney or sugar, nothing to do BIR, just use good yoghurt, fresh mint and cucumber…

  4. Tried it Al, found it far too sweet. I tasted it after the Mango Chutney and thought that was ok however the sugar was too much for me, gritty to boot. Regards Al.

  5. Text says natural yogurt, video shows Greek style, which is sharper, so would need sweetening – which do you recommend?

  6. Instead of Cayenne pepper a nice touch is to get some fresh green chilli's and bash them up with some rock salt to a paste and add that, Gives this dip a lovely kick

  7. Tried many variants of this but this is the closest I have got to BIR:-
    Yoghurt Mint Sauce

    400ml natural yoghurt
    3 tbs lemon juice
    1 tbs mint sauce (same as in Al's vid)
    1 tbs mango chutney
    2 tsp castor sugar
    1/2 tsp chilli powder (or to taste)
    2 garlic cloves
    1/2 tsp yellow colour food colouring. Powder is best
    Add a splash of milk to get desired consistency
    Whizz the lot up in a blender

    Makes approx 600ml

    Hi Al the raita I get from my local takeaway is always yellow and delicious. Most people just call it tikka sauce. I haven't been able to replicate it and I cant find a recipe online. By the way I followed your Madras recipe to the letter….WoW.

I can't believe it has taken me more years than I care to think to find a recipe that replicates the restaurant/takeaway sauce exactly and it's this is easy I did put a little less sugar in and little more mint but it's exact my whole family are now addicted and I think our takeaway has lost a few customers.
