4 oz (118 g) semi-sweet chocolate (I used bittersweet chocolate)
1/2 cup (118 ml) evaporated milk
1/4 tsp vanilla extract

What i do, and my chocolate never seizes, literally the exact same ingredients you use, chocolate chips or a bar and heavy cream and vanilla or almond extract, but i whisk the entire time on low to medium from the start. I never stop whisking and NEVER LET IT SIT still and it never seizes. And i make chocolate fondue and sauces every 2 days. Try whisking constantly in a pan. Maybe it'll help.

    May I ask why you set it for so long without whisking it???

  10. I wonder if this would work using it for chocolate covered strawberries! I’m almost always fail one or two times at melting chocolate before I get it right lol have you tried the method where you put water in a pot then put the chocolate in a bowl on top?

  16. I'm so glad that it ended up working out! I don't know if it's true or not, but it has always been my belief that you should never put chocolate in a pan over direct heat. Doing that is a set up for failure. Jmo. ❤

  18. A couple ideas is using a double boiler or the microwave at a low setting. Works great on both methods. Oops…. you just mentioned a double boiler.
