This vegeterian lentil ball / Mercimek koftesi is the most popular appetizer of Turkish cuisine.
The lentil balls are low in fat and full of protein and fiber.You also get good carbs from the bulgur.
You can keep some lentil balls ready in the refrigerator for next couple days.
Ingredients
2 cups red lentil
1 cup fine bulgur (cracked wheat)
5 cups water
1 big size onion
3/4 cup olive oil
2 tbs tomato paste
2 tbs pepper paste
1/2 cup chopped parsley
2 or 3 green onion (optional)
2 tsp salt
2 tbs cumin
2 tsp cayenne pepper (if you like spicy)
1 tbs black pepper
Lettuce and lemon for garnish

Bulgur is not gluten-free. Bulgur is a cereal made from wheat, so if you have celiac disease, non-celiac gluten sensitivity or a wheat allergy, do not eat bulgur. Bulgur is made by parboiling whole wheat (usually the durum variety), drying it, then grinding it.
