NCHFP ketchup recipe instructs you to remove tomato skins before simmering ketchup and finally processing with a food mill. Isn’t the point of using the food mill to not have to manually remove skins and seeds in the first place?

Interesting. My thoughts are the same as yours regarding the purpose of the food mill being to remove the skins. I just made a batch of ketchup using the ball recipe and it doesn’t say to remove them first. Turned out great too!
