1 can sliced pineapple (20 oz)
1 package of your favorite yellow cake mix or recipe (15.25 oz)
3 eggs
1/3 cup vegetable oil
1/2 cup light rum (coconut flavored)
1/2 cup butter (1 stick), melted
1 cup light brown sugar

  6. HI, I just made these and they are fabulous! Just one note to watchers… In a standard 20 oz can of pineapples, there are only 10 slices so at 4 pieces in each tin there is only enough for 20 cupcakes so you will need to use less, cut pieces smaller or buy more pineapples. I like having 4 good size pieces on each the next time I make them I will but more pineapples. I did use the rum thanks to a watcher that told me the alcohol bakes out and all that stays is the coconut flavor. They were very yummy! This recipe is a keeper. Thanks!
