Don’t think the flabby skin in a chicken braise is at all texturally pleasant – nor is breast meat which tends to inevitably dry-out when cooking in the aforementioned braise. The sauce sounds lovely – deffo traditional Greek casserole spices. Could be viewed as a Greek style Coq Au Vin – looks lovely
