I’m interested in making this pickle. It is in a published canning cookbook, which I assume means tested recipes. It has quite a bit of vegetable oil, though. What do you all think?

    Hmmmm
    I don’t think I’ve seen a recipe that was approved that had eggplant in it. I would be concerned about the density. Is this water bath or pressure processed?

    Can you please give the title of the cookbook? Unfortunately there are a lot of websites and recipe books out there that look okay but aren’t actually tested.

    I don’t see anything on the Firefly site about who tested these recipes, what lab did the work, or who would be able to claim responsibility if the followers fell ill. I sent a message asking – let’s see if I get a reply?
