How do you make authentic greek gyros when you don’t have a rotisserie? The trick is the double bake – now you have the right flavor and texture for gyros at home

GYRO RECIPE
1 medium onion
2 lbs ground lamb
4 cloves garlic minced
1 Tbsp dried marjoram
1 1/2 ts dried rosemary
2 tsp dried oregano
1 tsp kosher salt
1/2 tsp black pepper
preheat the oven to 325
put the onion in a food processor and process
turn out onto a tea towel, gather the ends and squeeze until all the juice is removed – return to the food processor
add the lamb, garlic, marjoram, rosemary, oregano, salt and pepper and process until it’s a paste
place the meatloaf onto a jelly roll pan and shape into a rectangle about 1 1/2-2 inches tall – don’t forget to add a meat thermometer
bake at 325 until the meat hits 155-160
take out of the oven and let rest for 10 mins
turn the oven to broil
then slice the meat thin and lay out flat on a baking sheet (or two)
broil 2-3 mins, or until the meat starts to crisp on the edges
Serve on a pita bread with tzatziki sauce, thinly sliced red onions, diced tomato and feta cheese!
Tzatziki sauce
1 1/2 C greek yogurt*
1 medium cucumber
pinch of kosher salt
4 cloves garlic
1 Tbsp olive oil
2 tsp red wine vinegar
5-6 mint leaves (minced – more or less depending on your preference)
peel and de-seed the cucumber then grate – place the grated cucumber in a tea towel, gather the ends and squeeze to remove the liquid
You can either just stir all the ingredients together (in this case be sure to mince the mint leaves well)
OR place all the ingredients in a food processor and blend – you can blend a little or a lot depending on the texture you want in the end.
refrigerate and let the flavors develop together.
serve with pita bread triangles or on top of gyros
*if you don’t have access to greek yogurt you can place plain yogurt in a tea towel, gather then ends and tie to a wooden spoon and hang over a bowl overnight in the fridge – this will thicken the yogurt to the thickness needed

I made this today with ground chicken. It was ok alone but with tsatsiki sauce it was good. I wanted to use up my ground chicken so there you have it.
With the ground chicken the oregano and rosemary were stronger tasting. I don't like those to be too strong personally.
With that said I can't wait to make it with ground pork and lamb. I'm betting it will be delicious. Thank you for the video even if it is 3 years later. Those negative comments are obviously trolls and they get off on it. I laugh at their pitiful attempt at some attention! 😆😝

The only time I have ever had one was at arby's. With roast beef. I think I just love the bread but they are very good to me
Great instructions. I come from a Greek family but we didn't make food truck food. So this is something I am looking forward to. I think the spices are right on as opposed to the ones I have seen that do their own "Take off" on the traditional ones I am more familiar with. THanks a bunch

It's not fair that someone said is inaccurate but does not give her version. I am happy to have this one . Anyone should be happy with the recipes or not see them at all
I disagree with the process of grinding the lamb meat is gross😮. If you had to field dress a lamb 🐑 off the bone, like my dad had to do it down South, you would have something to complain about.
