  1. Are you using a special kind of coconut cream I'm unaware of? because all the coconut creams I can find are more than 400kcal per cup and in some cases around 1000kcal!

    Can you think of a recipe that can be prepped cold/raw and can be cooked quickly on a skillet or oven before eating? I prepped 5 days of chicken dinners only to waste them cause i didnt eat them 😩 The goal would be that if I didnt want to eat a certain night or two the food will still be good to go whenever I do cook it–something like a single serve chicken marinade or something that I can freeze?

    I tired the recipe and nailed everything!…except the fact that I bought Cream Of Coconut instead of Coconut Cream 🙁
    Needless to say, I had to improvise lol

  6. I made this dish and it had too much of a coconut flavor for me but my left over squash I just made a garlic lemon sauce and it was great. Thanks for the recipe
