A spicy chorizo would be great
It's like a risotto. Much more could be done now. e.g. mushrooms or vegetables.
I have been watching Jamie for many years, he is at another level now – mature, educational, obviously talented and easy to watch.
Though Greek I 've never had kritharaki (orzo)cooked like that but I will certainly try it. You made my mouth water despite just having had lunch. Thank you
We put orzo in rice, it elevates the texture. Slightly fry it in butter until brown then add the rice and water.
I'll try this but probably put some small chunks of grilled halloumi in it to give it some heterogeneity

You can find ‘aged’ halloumi which is harder than the squeaky halloumi in Turkish/Greek food stores which is much better for grating over pasta

Looks great! Also consider toasting your orzo in some butter/olive oil before adding to the sauce for extra flavour as well 🙂
The base (orzo+tomato sauce) is incredible. Did it with fresh oregano, green olives and feta. Simple but delicious.

I made this with 2 tins of tomatoes and Risoni instead of Orzo… not sure if the Risoni was the problem, but the ratios were way off. I had to strain half the liquid away to make it work out. Still lovely in the end
