I steamed them instead of boiling. Lastly, I used black pepper I stead of cayenne because I wanted to be able to eat it non-spicy or spicy.
I just made this and it was ridiculously delicious and easy. I’m probably gonna make this once a week for the foreseeable future. I toasted some garlic at the beginning of the sauce part and added a pinch of basil and used some chicken stock to thin the sauce a bit.
ive been craving mac n cheese and this is so satisfying ! i used a bag of instant cauliflower and oo boy aint it good ! i followed madeline blatts advice and added garlic poweder and onion powder and it came out delicious. give this recipe a try if you havent already 🙂
Mkay, this was amazing. I added extra cheese on top and then broiled it in the oven for 10 min or so and got the cheese nice and charcoaled on the top. Next time, I will probably add butter with the cream and cheese, it helps make a better consistency rue/sauce.

The cauloflower is waaaay too hard with just 4 minutes. Leave it some more, it ruined the whole thing for me

I'm gonna try air frying the cauliflower and then adding it to the cheese not a big fan of mushy food

Doesn't all the nutritional value of the cauliflower get thrown out in the boiling water? I would rather steam the cauliflower instead of boiling it .
