To make a traditional Greek white bean soup within 20 minutes would be impossible? Not according to DW Food chef Felicitas Then! She’s taken on the challenge, serving up the staple of national cuisine, fasolada – considered one of Greece’s most traditional recipes – in under 20 minutes
Recipe:
Fasolada
preparation time approx. 20 min.
Ingredients for 4 people:
1 onion
2 to 3 stalks of celery
2 cloves of garlic
2 carrots
1 red chili pepper
4 tbsp olive oil
Salt
Black pepper, freshly ground
1 pinch of sugar
3 sprigs thyme
2 bay leaves
2 cans of white beans (800 g)
1 can of tomato puree
200 g Greek yogurt
1. Finely dice the onion, celery, garlic, carrots, and chili pepper. Heat the olive oil in a pot, and sauté the vegetables in it for about 5 minutes. Deglaze with broth and tomatoes.
2. Next, season with salt, pepper, sugar, thyme and bay leaf and let simmer for about eight minutes. Finely chop the parsley and add to the soup, holding back one tablespoon. Drain the beans, and add them for a couple of minutes at the end.
3. Serve the soup with a dollop of yogurt and sprinkle of parsley.

Meatless soup, yay! But sad to say that the tradition of people eating together food laid in a table doesn't cut it anymore these days. Greeks would have to rethink that one, or at least wait decades to return to that "old normal".

I make a very similar soup every week, but takes about an hour to prepare. Besides celery, onion, carrots and garlic, I also add diced potato and chopped cabbage. I use only bay leaf for spice and the heat from ground black pepper. I cook my soup in an Instant Pot for 30 min. After it is done, I keep it boiling for a few more minutes then add whatever protein I happen to have handy like leftover roasted chicken, smoked sausage, canned bean or even fish like cod or salmon. The final touch is add some spinach or kale.
Ingredients missed out can of tomatoes I think?

Hier bin ich, Feli, wegen Deiner Empfehlung in Deinem Insta Channel. Das ist ein tolles Video und ein tolles Gericht, das ich definitiv nachkochen werde. Du hast es super erklärt und 20 Minuten Zeit sollte jeder haben. Dazu sind es wenig Zutaten, die man auch einwandfrei bekommt. Mein liebstes, griechisches Gericht ist tatsächlich Gyros mit selbst gemachtem Tzatziki…
